Cranberry cookies are so attractive, and while we eat these cookies year 'round, they are great Christmas cookies.
Either walnuts or macadamia nuts could be used in this cookie---I think pecans would be good too. I generally just use the nuts that we have in the house. We buy all kinds of nuts in bulk from Costco and store them in the freezer. They store nicely there for months and this way, we always have an assortment on hand.
1/2 cup butter
1 cup white sugar
2 tablespoons orange juice
1/4 cup milk
1 egg
3 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped walnuts (or macadamia nuts)
2 1/2 cups coarsely chopped cranberries
1. Preheat over to 375 degrees. Cream together butter and white sugar. Add orange juice, milk, and egg, beating between each addition.
2. In a separate bowl, sift together flour, baking powder, baking soda, and salt.
3. Mix dry ingredients into wet ingredients. Fold in nuts and cranberries.
4. Drop onto greased baking sheet by teaspoons. Bake for 10-15 minutes. Allow to cool completely before frosting. (I use store bought cream cheese frosting.)
