Indian Spiced Mixed Nuts


Nuts are no longer just a holiday snack food.  While I agree they make an easy appetizer for entertaining, nuts are also a healthy snack item.  Most days my kids return from school famished, and the more protein they eat immediately after they step foot at home, the better it is for everyone. 

This Indian spiced variety of mixed nuts is so tasty it will be gone in no time, whether its for your family or for a dinner party.   Substitute your favorite nut (cashews, almonds, pecans, walnuts) for the mixed nuts if desired and enjoy them as a finger food, tossed into a salad, or given as a hostess gift.  Spiced nuts will also jazz up a standard trail mix recipe.   Once roasted and cooled, store nuts in an air-tight container.  To lengthen their freshness, store them in your freezer.


INGREDIENTS:
1 tablespoon unsalted butter, melted
1 tablespoon fresh ginger, peeled and finely minced
1 teaspoon garam masala
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
2 cups lightly salted mixed nuts

DIRECTIONS:
1.  Preheat oven to 300 degrees F.  Line a rimmed baking sheet with aluminum foil or silpat.  In a small bowl, toss together butter, ginger, garam masala, cumin, and cayenne. 


2.  Add nuts to bowl and mix until evenly coated with the spice mixture.


3.  Spread out nuts in a single layer on the prepared baking sheet. Roast the nuts, stirring occasionally, until golden brown and fragrant, 25-35 minutes.


4.  Transfer nuts to a bowl and serve warm or at room temperature.  Nuts may be roasted up to 24 hours before serving.  Store in lightly covered container at room temperature.
