My garden is continuing to thrive this summer and it is producing an impressive number of vegetables. Right now the cucumbers are by far the most productive plants in my garden, producing roughly 5 cucumbers every time I harvest....and they are all around 15 inches long!
Needless to say, that is copious amount of cucumbers to consume. I have been trying new cucumber salads and recipes almost daily, and this cucumber salad by Simply Recipes has stole the show. This beautiful salad has great flavor, easy preparation and assembly, and an ingredient list that is not too involved. Even without your garden bursting with cucumbers, this is a refreshingly cool salad perfect for a hot summer night meal.
INGREDIENTS:
1 pound thin skinned cucumber, thinly sliced (such as Persian, Armenian, Japanese Cucumber, or English Cucumber)
1/4 red onion, thinly sliced and cut into 1-inch long segments
3-4 red radishes, thinly sliced
1/4 cup mint leaves, minced
2 tablespoons white wine vinegar
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1/4 cup crumbled feta cheese
DIRECTIONS:
1. In a medium bowl, combine sliced cucumbers, red onion, radishes, and mint.
2. Gently toss with white wine vinegar, extra virgin olive oil, salt, and pepper. Refrigerate for at least 30 minutes. Taste test to determine if you need additional salt and pepper, and add as necessary.
3. Just prior to serving, sprinkle with crumbled feta cheese.

Yea! I'd love to pass some along. Saying that my family has had their fill of cucumbers this summer is putting it mildly. I never expected the two, tiny cucumber seedlings I purchased in spring to be such overachievers??
