Baked Apples


Do you need something to do with soft apples? In my opinion, an apple should be crunchy and juicy.  There is nothing like looking at the appearance of an apple and expecting the first bite to satisfy and delight, only to find a soft and grainy bite instead.  Those kind of apples would sit in our fruit bowl and rot if I let them.  While no one here will eat a soft apple with a 9-foot pole, my conscious will not let me waste them given the millions of people starving in this world.  This recipe is the perfect solution for those softer-than-you-want-to-eat apples and a great tasting accompaniment to a warm bowl of oatmeal.

INGREDIENTS:

2 cups dried cranberries
1 1/4 cups coarsely chopped walnuts
1 cup packed brown sugar
1 cup water
2 teaspoons ground cinnamon
6 Gala apples, cored and chopped (about 3 pounds)

DIRECTIONS:

1. Place walnuts in saute pan and brown over medium-high heat, stirring frequently, until golden brown, about 5 minutes.

2. Place cranberries, brown sugar, water, cinnamon, and apples in medium-size mixing bowl. Toss well. Transfer mixture to 9 x 13 baking pan.


3. Top with toasted walnuts. Bake at350 degrees for 60 minutes, or until apples are softened but not mushy.


4. Enjoy as an accompaniment to pork or over oatmeal, pancakes, or spiced pumpkin bread. One serving size is 1/4 cup, but my kids will eat a double or triple serving over a 1 cup serving of warm oatmeal.
