Easiest Christmas Cookie on Earth

When you are in a pinch for time but still want a satisfying cookie, this is the recipe I recommend. It is my children's favorite Christmas cookie. They started making it years ago with my mom and think that the Christmas season is missing something if we don't make this recipe. I'm not kidding! It just may be the EASIEST cookie on earth and the taste is amazing. Well, the gourmet man in the house would not say it's amazing, but he would say it's good. However, if you compare the ingredients used and the time expended to prepare it with the end result, it is easy to say they are amazing.

You only need THREE ingredients: 8-9 packages of Rollo Chocolates, a bag of square pretzels, and pecans.

Simply preheat your oven to 200 degrees and place about 25 pretzels on a cookie sheet. On top of each pretzel, place one Rollo.


Place cookie sheet in preheated oven for 3-5 minutes. Do not over bake them; all you are trying to do is soften the chocolate on the Rollo. While the cookie sheet is in the oven, empty your bag of pecans into a bowl and begin to look for and separate out the pecans that are intact and not chipped or broken; these are the pecans we are going to use. We want the cookies to look pretty after all! A broken pecan just won't do!

Remove the cookie sheet and immediately place one unbroken, unchipped pecan in the center of each Rollo and gently press it into the melted chocolate. We are just trying to have the pecan adhere to the softened chocolate, so only a little pressure is necessary.

And whoa la! You're done! I said it was the easiest cookie on Earth....I wasn't kidding was I?
