Roasted Acorn Squash


This recipe is so simple it's almost ridiculous. You will need: Acorn Squash, kosher salt, unsalted butter, brown sugar, and maple syrup. One acorn squash produces 2 adult-size servings.

1. Start with acorn squash and cut lengthwise. Acorn Squash is difficult to cut, so be careful. Empty the contents of each side. Remove all seeds and stringy membranes, just like you would do with a pumpkin.

2. Place each half on baking sheet and score outer edges of squash with sharp knife 6-8 times. Sprinkle each half with pinch of kosher salt. In the center of each half, put 1 T butter and 1 T brown sugar. Drizzle with maple sugar.

3. Bake in preheated 400 degree oven for 40 minutes.
